Pisto Fritada is the Spanish equivalent of the French ratatouille. Eat it as a side or with eggs, it also works well as a filling for empanadas. Enjoy at room temperature or heat it in a microwave oven for one minute or with a small amount of oil on a frying pan.
Ingredients: Chopped tomatoes (55%), eggplant (12%), onion (10%), zucchini (9%), green pepper (3%), red pepper (3%), extra virgin olive oil (1.5%), salt, corn starch, acidity regulator: citric acid.
